3 tbsps soybean oil
5 lime leaves,finely sliced
1 tsp sesame oil
¼tsp low sodium soy sauce
¼tsp salt
¼tsp sugar
750g stingray
Banana leaf cleaned and glazed with soybean oil
Spice Paste:
2tsps chilli powder
5 shallots
6 cloves garlic
6 red chillies
1tsp belacan or shrimp paste
1cm galangal
3 stalks lemon grass
5 buah keras or candlenuts
¼ cup water

Cara-cara
Heat oil in and fry blended spice paste for 5 mins.Add lime leaves,sesame oil,soy sauce,sauce,salt and sugar.Continue frying until fragant and almost dry.Set aside to cool.Rub fried spice paste on boyh sides of the fish and place on banana leaf.Grill in a 180C oven for about 5mins on each side or until fish is cooked.Remove fish from banana leaf and serve immediately.
