Banana Filled French Toast

1 loaf French bread
2 bananas (not overripe)
C. brown sugar
C. pecans (optional)
3 large eggs
C. milk or cream
1 t. vanilla
C. unsalted butter


Cut bread loaf in 1-inch-wide slices, and slice pockets in each.

Peel and slice bananas.

Mix brown sugar and nuts. Lay bananas in pockets and sprinkle sugar mixture on top. Mix together eggs, milk and vanilla.

Dip each French toast piece into egg mixture; place in skillet with melted butter. Cook until brown. Add more butter, if needed. Can keep warm in oven if desired.

To enhance the dish, dress the banana toasts with powdered sugar, maple syrup or whipped cream.
